Winemaker Notes: Harvested at night when temperatures are cool, and the skins are at their most firm, then gently pressed early the next morning. The resulting juice was taken to tank, settled until clear, and transferred off the solids into separate tanks to begin a long, cool fermentation. After fermentation, the wines rested on lees in 100% Stainless for six months before the best lots were blended and bottled.
